Does anyone know how high the flying stem was for Great Eagle in Warhammer fantasy 8th edition?

I suspect it’s the same as for the Great Eagle from the Hobbit range, they seem of similar size:

This probably uses the ’larger’ (60mm) flying base:

This comes with 30mm and 35mm stems (excluding the bits which fit into the model and base), so one of those I guess. They also sell a smaller 32mm flying base with commensurately smaller (15mm and 20mm) stems, which I have. That’s more appropriate for a Warhawk-sized model in my opinion though.
So in short, my best guess is 30mm or 35mm, I don’t recall any rules-based prescription on this. The stems in my link above seem to be the same length whether the end bit is ball and socket or the simpler 'plug' type.
