I cannot imagine GW ever putting undeads in the starterbox. They are horrible in teaching new people the game. Orcs/Gobs makes sense because parents will instantly see the game as fantasy. After having placed terrain such as others have described we usually(if we remember) roll a die for each piece and if it's a 6 we refer to the mystical terrain pages in the BRB. I like Ironcurse Icon on someone riding with the Silver Helms. Maybe on a mage. Combined with high magic you can get a quite good save versus all warmachines. Boltthrowers could be nasty, and the same goes with cannons.

My thinking with the flame phoenix was not so much to kill the destroyer but just keep it occupied a turn or two.

The Flame Phoenix should be able to keep it engaged for a few turns due to fireborn. Maybe also a unit of Dragon Princes with their dragon armour.
