I think there are - in 5E there was even a pegasus rider model in the HE range. I'm now torn between wishing I'd bought it when it was available and glad I didn't because it's now only usable as a proxy...

I'd guess it got removed because GW figured that Eagles better filled the position of a low-end flying mount, making the pegasus redundant for High and Wood Elves.
