Large Targets
Do large targets really only count as not gaining cover from 'obstacles' i.e. walls, fences etc, but still take cover from houses, woods, hills, troops etc? i.e. with the paucity of walls you find on the average battlefield, large target rules for shooting are almost non-existent?

Correct, only the obstacle type of terrain does not grant cover to large targets.
Keep in mind more than half of the model needs to be obscured and with GW's penchant for making bigger and bigger monsters it's really hard to hide them behind anything non-monstrous.
Old Dark Elf Hydra can safely hide behind infantry... the new one needs at least cavalry angled just right to get that kind of protection.
Phoenix can't basically hide behind anything (maybe a building) due to the flight stand.
etc. Just compare the latest HE dragon (low, swooping profile) to latest DE dragon (standing tall and proud)

just a small point, the movement rules for flying monsters are that they land after each movement, so a model on a flight stand behind a unit isn't actually in the air/flyin....!! therefore shouldn't, a phoenix for example, get cover from cavalry at least?!

You're on dodgy ground here I feel. Where do you draw the line? Model your phoenix sitting on the ground and you have a deal. True Line of Sight doesn't use imagination of "but he'd have ducked his head"

would you not like line of sight rules where you are not penalised for using cool models or a crazy conversion? looking at the hydra example you gave already, Don't you think its a bit silly that one version of a hydra can get cover from infantry and one cannot?

True LoS makes hiding behind units difficult for everyone, and leads to discussions. A more streamlined system, perhaps along the lines of size based on unit type and cover for same/smaller would be preferable.
[I'd also like to get rid of templates, since deciding how many models are hit is difficult and timeconsuming. Catapults should be something like Multiple Hits(3d6)]

Well, I don't feel penalized for using cool models or crazy conversions so we can get that out of the way.
With the difference being a bit of cover or no cover there's really not a whole lot of a difference, things that matter (war machines) don't follow cover rules anyway and I find a monster hiding behind some infantry rather silly in the first place.
Forests are great if you want to give you massive models some cover since they grant it even if there are no actual trees in the way. Not to mention TLoS let's me counter cannons by blocking their potential targets and forcing them to take less than optimal shots.
